I haven't posted much to this blog lately, but one of my resolutions for 2023 is to change that. If you've ever read my author bio, you know one of my favorite things to do is bake, so I decided to start including my favorite recipes in some of my blog posts.
We moved into a new house a little over a year ago and one of things I love about it is the little lemon tree in the backyard. I use those lemons for so many things including lemon loaf cake, which is the first recipe I'm sharing with you all on my blog.
This recipe is for all you citrus lover out there. Enjoy:)
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
2 tablespoons lemon zest
2 tablespoons lemon juice
1/4 cup sour cream
For the glaze:
1 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon milk
Preheat the oven to 350 degrees farenheit. Grease a 9 x 5 inch loaf pan.
In a small mixing bowl stir together the flour, baking soda, and salt. Set aside.
In a larger mixing bowl cream the butter and sugar for about 3 minutes. Add the eggs, one at a time. Then add the lemon juice, lemon zest, and sour cream.
Mix the dry ingredients into the wet ingredients and stir until just combined.
Pour into prepared pan, then bake in the oven for about 50 minutes or until a toothpick inserted into the center comes out clean.
Remove loaf from oven and let it cool in the pan for about 15 minutes.
While the loaf cools, prepare the glaze by mixing the powdered suagr with lemon juice and milk. Use more powdered sugar if you prefer a thicker glaze or more milk for a thinner glaze.
Remove loaf from pan. Let it cool completely before pouring glaze over cake.
